Notes: Indians use inner bark, leaves medicinally. Bark, root, leaves, and berries toxic. Berries eaten only when cooked.
SAMBUCUS CANADENSIS. The flowers steeped in water for perfumes and confectionaries. Raw Elderberries are unpleasant, and contain small amounts of poisonous alkaloids. Cooked however, they are used in pies, jellies, and of course the famous Elderberry wine. The flowers are edible and are used in jams, jellies and Elderberry fritters. Dip entire blossom into flour and fry. Delicious! American Indians used the entire plant of the Elderberry. Birds LOVE this tree and will flock to the berries!
